Il suffit de l'agiter avant de servir....<\/span><\/div><\/li><\/ul><\/div><\/div>\n<div id=\"recipe-video\"><\/div>\n\n<\/div><\/div>\n<h2>Pourquoi c&#8217;est un aliment int\u00e9ressant&#8230;<\/h2>\n<p>La choucroute est obtenue par un ph\u00e9nom\u00e8ne naturel appel\u00e9 : <strong>Lacto-fermentation<\/strong>.<\/p>\n<h2>Le chou \u00e0 choucroute :<\/h2>\n<p><a href=\"https:\/\/bymima.com\/blog\/wp-content\/uploads\/2018\/12\/chou-\u00e0-choucroute.png\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-1354 alignleft\" src=\"https:\/\/bymima.com\/blog\/wp-content\/uploads\/2018\/12\/chou-\u00e0-choucroute.png\" alt=\"chou-a-choucroute\" width=\"228\" height=\"250\" \/><\/a><\/p>\n<p>C&#8217;est un chou vert, tr\u00e8s serr\u00e9, aux feuilles lisses et brillantes.<\/p>\n<p>Notez que n\u2019importe quel l\u00e9gume de pr\u00e9f\u00e9rence <strong>bio,<\/strong>\u00a0peut \u00eatre conserv\u00e9 selon ce proc\u00e9d\u00e9.<\/p>\n<p>Les plus int\u00e9ressants sont \u00a0: le chou, la carotte, la betterave, le concombre, l&#8217;aubergine, la courgette, \u00a0l&#8217;ail, les haricots verts, les tomates vertes, les cornichons, les oignons\u2026<br \/>\n<strong>La lacto-fermentation ne n\u00e9cessite aucun mat\u00e9riel particuli\u00e8rement on\u00e9reux.<\/strong><\/p>\n<p><strong>Il faut :<\/strong><br \/>\n&#8211; Des bocaux en verre type Le Parfait,<br \/>\n&#8211; Du sel marin (non raffin\u00e9 de pr\u00e9f\u00e9rence),<br \/>\n&#8211; De l&#8217;eau de source ou filtr\u00e9e car l&#8217;eau du robinet chlor\u00e9e ne convient pas,<br \/>\n&#8211; Les l\u00e9gumes \u00e0 conserver.<\/p>\n<p><strong>Pr\u00e9paration :<\/strong><\/p>\n<p>On lave et on \u00e9bouillante les bocaux, les couvercles et les joints. On les laisse s\u00e9cher sans les essuyer.<\/p>\n<p>On lave, \u00e9pluche et d\u00e9coupe ou r\u00e2pe les l\u00e9gumes. On a le choix maintenant entre 2 m\u00e9thodes.<\/p>\n<p><strong>M\u00e9thode N\u00b01.<\/strong><\/p>\n<p>On dilue 1 C \u00e0 soupe de sel dans 1 litre d&#8217;eau de source.<\/p>\n<p>On remplit les bocaux avec le l\u00e9gume\u00a0<strong>en tassant tr\u00e8s fermement<\/strong>, seul ou en m\u00e9lange avec un autre l\u00e9gume (ex : betterave-carotte), on ajoute des aromates si on veut, des graines de moutarde, de cumin, de carvi, de fenouil, de coriandre, baies de geni\u00e8vre, de poivre, clous de girofle, herbes aromatiques, feuilles de laurier, ail&#8230;), on tasse encore, on couvre d&#8217;eau froide sal\u00e9e et on ferme les bocaux.<\/p>\n<p style=\"padding-left: 120px;\"><strong>M\u00e9thode N\u00b02.<\/strong><\/p>\n<p style=\"padding-left: 120px;\">On met les l\u00e9gumes r\u00e2p\u00e9s dans un grand saladier, on ajoute un peu de sel et on malaxe (10 g par kg de l\u00e9gumes suffisent). Le sel fera sortir l&#8217;eau naturellement contenue dans le l\u00e9gume au bout de quelques minutes.<\/p>\n<p style=\"padding-left: 120px;\">On remplit les bocaux avec cette pr\u00e9paration en tassant toujours fermement. Le jus va remonter \u00e0 la surface&#8230; On ferme les bocaux&#8230;<\/p>\n<p><strong>Retour \u00e0 la pr\u00e9paration :<\/strong><\/p>\n<p>On place les bocaux \u00e0 20-22\u00b0C pendant 2 ou 3 jours afin de lancer le d\u00e9but de la fermentation. Les bact\u00e9ries vont se d\u00e9velopper et faire descendre l&#8217;acidit\u00e9 au PH 4. Le ph\u00e9nom\u00e8ne se stabilisera \u00e0 ce point.<\/p>\n<p>On range ensuite les bocaux dans un lieu plus frais (15-18\u00b0C) et on patiente un mois minimum avant de d\u00e9guster.<\/p>\n<p>Une fois entam\u00e9, le bocal doit \u00eatre conserv\u00e9 au r\u00e9frig\u00e9rateur et consomm\u00e9 dans les 15 jours.<\/p>\n<p><strong>La lacto-fermentation ne signifie pas que le produit contient du lait sous une forme ou une autre !<\/strong><\/p>\n<p>Les produits lacto-ferment\u00e9s peuvent \u00eatre consomm\u00e9s par les intol\u00e9rants au lait car ils ne contiennent que de l\u2019acide lactique, qui n&#8217;a rien \u00e0 voir avec la prot\u00e9ine ou sucre allergisants du lait.<\/p>\n<p><strong>La choucroute est obtenue avec la m\u00e9thode N\u00b02<\/strong>, celle que je pr\u00e9f\u00e8re pour mes pr\u00e9parations personnelles. On m\u00e9lange. Puis on \u00e9mulsionne avec de l&#8217;huile de bonne qualit\u00e9, olive ou tournesol.
