Ce sont les crois\u00e9s qui l&#8217;import\u00e8rent en France et en Autriche. Il est \u00e0 l&#8217;origine de nombreuses p\u00e2tisseries connues depuis le Moyen \u00c2ge.<\/p>\n<p><strong>Antonin Car\u00eame,<\/strong> (mort en 1833), a perfectionn\u00e9 la recette et a r\u00e9alis\u00e9 le <strong>feuilletage \u00e0 cinq tours que nous utilisons aujourd&#8217;hui.<\/strong>..<br \/>\nL&#8217;eau contenue dans la p\u00e2te (appel\u00e9e d\u00e9trempe) est transform\u00e9e en vapeur \u00a0par la chaleur du four. Chaque feuille de p\u00e2te est rendue imperm\u00e9able par la fonte de la mati\u00e8re grasse qui retiendra cette vapeur d&#8217;eau. Cette op\u00e9ration est le \u00ab <strong>tourage<\/strong> \u00bb : abaisser, tourner, plier, qui permet d&#8217;obtenir <strong>un nombre important de couches :\u00a0<\/strong><strong>730 feuillets de p\u00e2te ! ! !<\/strong><\/p>\n<p>Pour aller plus vite, j&#8217;utilise de la p\u00e2te feuillet\u00e9e pr\u00eate \u00e0 l&#8217;emploi, de bonne qualit\u00e9 et sans produit animal, bien s\u00fbr. <strong>Simple mais \u00e7a prend du temps !<\/strong><\/p>\n<p>La p\u00e2te feuillet\u00e9e sans gluten ne donne pas les m\u00eames r\u00e9sultats qu&#8217;une p\u00e2te feuillet\u00e9e classique&#8230; Dommage !<\/p>\n<h2>La p\u00e2te d&#8217;amande<\/h2>\n<p>C\u2019\u00e9tait une confiserie associ\u00e9e \u00e0 des raisins secs et de l\u2019eau de rose,\u00a0\u00e0 laquelle on attribuait des pouvoirs aphrodisiaques. Elle \u00e9tait surnomm\u00e9e \u00a0\u00ab\u00a0<strong>la confiserie du harem\u00a0<\/strong>\u00bb.<\/p>\n<p>Voici les deux types de proc\u00e9d\u00e9s de fabrication de la p\u00e2te d&#8217;amande :<br \/>\n&#8211;\u00a0\u00a0\u00a0\u00a0\u00a0A chaud : \u00a0les amandes fra\u00eechement \u00e9mond\u00e9es sont cuites avec un m\u00e9lange de sucre, de sirop de glucose et d\u2019eau dans des bassines de cuivre rotatives ou cuiseurs. Le m\u00e9lange est ensuite raffin\u00e9 pour obtenir une p\u00e2te fine et souple.<\/p>\n<p>&#8211;\u00a0\u00a0\u00a0\u00a0\u00a0A froid\u00a0: les amandes \u00e9mond\u00e9es broy\u00e9es sont m\u00e9lang\u00e9es \u00e0 du sucre dans des m\u00e9langeurs ou mixeur \u00e0 couteau.<\/p>\n<p>La p\u00e2te d\u2019amande est un produit sensible, sujet \u00e0 la fermentation et \u00e0 la moisissure.<\/p>\n<p>Si elle est trop malax\u00e9e, elle risque de devenir huileuse. <strong>Elle ne doit pas \u00eatre trop travaill\u00e9e<\/strong>.<br \/>\nPour une bonne conservation, la p\u00e2te d\u2019amande sera stock\u00e9e dans un endroit frais et sec, dans un emballage bien ferm\u00e9, afin d\u2019\u00e9viter son dess\u00e8chement.<\/p>\n<p><strong>Ce qui suit est \u00e0 retenir :\u00a0<\/strong><\/p>\n<p>La p\u00e2te d&#8217;amande du commerce, bio ou non, c&#8217;est avant tout beaucoup de sucre et peu d&#8217;amande !
