Elles renferment des <strong>carot\u00e9no\u00efdes,<\/strong>\u00a0de puissants antioxydants.<\/p>\n<p><strong>Attention \u00e0 la vitamine K\u00a0!<\/strong><\/p>\n<p>Si la betterave renferme 0,20\u00a0microgramme de vitamine K aux 100\u00a0g, il faut, en revanche, se m\u00e9fier des feuilles qui, elles, en contiennent 400\u00a0\u00b5g. En cas de traitement anticoagulant, ne pas consommer plus\u00a0d\u2019\u00bd tasse de feuilles crues, ou \u00bc\u00a0de\u00a0tasse si\u00a0elles sont cuites.<\/p>\n<h2>Comment consommer la betterave<\/h2>\n<p>On la consomme crue, r\u00e2p\u00e9e, ou cuite, d\u00e9coup\u00e9e en cubes ou en fines lamelles (carpaccio), assaisonn\u00e9e d&#8217;une vinaigrette, le plus souvent
