Il n&#8217;est pas cloisonn\u00e9, c&#8217;est \u00e0 dire qu&#8217;il n&#8217;y a pas de repli de la peau \u00e0 l&#8217;int\u00e9rieur de la chair.\u00a0Lorsqu&#8217;elle est <strong>cloisonn\u00e9e par une peau brun\u00e2tre<\/strong>, am\u00e8re : le tan, on a affaire \u00e0 une <strong>ch\u00e2taigne<\/strong>. Dans le cas du <strong>marron<\/strong>, il n&#8217;y a <strong>aucune s\u00e9paration&#8230;<\/strong><\/p>\n<p>C\u2019est le fruit comestible de certaines vari\u00e9t\u00e9s am\u00e9lior\u00e9es du ch\u00e2taignier\u00a0: marron de Lyon ou Bouche rouge, marron de Goujounac, marron de Lagu\u00e9pie, paragon, etc., qui sont multipli\u00e9es par greffage et produisent des marrons en bonne proportion.<\/p>\n<p>Le mot\u00a0\u00a0&#8220;<strong>marron<\/strong>&#8221; peut d\u00e9signer <strong>les ch\u00e2taignes dans leur ensemble<\/strong>. Ce fruit ne doit pas \u00eatre confondu avec le <strong>marron d&#8217;Inde<\/strong>, graine toxique du Marronnier d&#8217;Inde, que l&#8217;on appelle aussi souvent couramment \u00ab\u00a0marron\u00a0\u00bb. On appelait le ch\u00e2taignier \u00ab\u00a0l&#8217;arbre \u00e0 pain\u00a0\u00bb mais aussi \u00ab\u00a0l&#8217;arbre \u00e0 saucisses\u00a0\u00bb car les ch\u00e2taignes servaient aussi \u00e0 l&#8217;alimentation des porcs.<\/p>\n<h2>La castan\u00e9iculture<\/h2>\n<p><strong>Les ch\u00e2taignes<\/strong> sont cultiv\u00e9es avant tout dans les r\u00e9gions Rh\u00f4ne-Alpes, Aquitaine et Languedoc-Roussillon. Le monopole de la <strong>castan\u00e9iculture<\/strong> est d\u00e9tenu par <strong>l&#8217;Ard\u00e8che<\/strong>, reconnue en <strong>mai 2005\u00a0comme AOC<\/strong>. Entre septembre et f\u00e9vrier, marrons et ch\u00e2taignes sont disponibles sur le march\u00e9.<\/p>\n<h2>Ses qualit\u00e9s<\/h2>\n<p>Elle est deux fois plus calorique que la pomme de terre ou la banane&#8230;. la ch\u00e2taigne fait partie des <strong>fruits tr\u00e8s \u00e9nerg\u00e9tiques<\/strong>\u00a0: 180\u00a0kcal\/100\u00a0g. C&#8217;est en g\u00e9n\u00e9ral le gage d&#8217;un fruit bien plein. Fuir les fruits dont la coque pr\u00e9sente des trous\u00a0: ils sont attaqu\u00e9s par les vers.<\/p>\n<p dir=\"ltr\">Cette ch\u00e2taigne est magnifique avec ses reflets roux et son duvet blanch\u00e2tre&#8230;.<\/p>\n<p dir=\"ltr\">On la cuisine grill\u00e9e, ou cuite \u00e0 l&#8217;eau&#8230;. Personnellement, je l&#8217;utilise le plus souvent en <strong>farine<\/strong> ! ou en boite, la <strong>cr\u00e8me de marron<\/strong> !<\/p>\n<p dir=\"ltr\">Pour ce velout\u00e9, j&#8217;utilise des marrons en boite, pr\u00e9par\u00e9s au naturel. Je v\u00e9rifie si les fruits sont cloisonn\u00e9s, si oui, j&#8217;enl\u00e8ve les petits restes de peau pour que ma pr\u00e9paration n&#8217;ait pas un go\u00fbt \u00e2pre&#8230;<\/p>\n<h2 dir=\"ltr\">Le 4 \u00e9pices<\/h2>\n<p>En France on trouve g\u00e9n\u00e9ralement sous l&#8217;appellation de <strong>quatre \u00e9pices<\/strong> un m\u00e9lange qui en contient&#8230; cinq : du poivre moulu, de la muscade r\u00e2p\u00e9e, du girofle et de la cannelle en poudre et parfois du gingembre.<\/p>\n<p>Le <strong>quatre \u00e9pices<\/strong> poss\u00e8de des propri\u00e9t\u00e9s
