Je vous propose ce dessert \u00e9l\u00e9gant et raffin\u00e9, mais tr\u00e8s simple \u00e0 r\u00e9aliser&#8230;. Les tartelettes aux poires poch\u00e9es !<!--more--><\/p>\n<p>Vous pouvez servir ces tartelettes avec une glace \u00e0 la vanille vegan, ou une cr\u00e8me fouett\u00e9e v\u00e9g\u00e9tale !<\/p>\n<h2>Des poires conf\u00e9rence<\/h2>\n<p>Je choisis les <strong>poires conf\u00e9rence<\/strong>, pour leur forme longue et \u00e9lanc\u00e9e, et pour la fermet\u00e9 de leur chair. Ce sera un atout pour r\u00e9ussir ces tartelettes ! Elles sont d\u00e9licatement parfum\u00e9es.<\/p>\n<p>Je commence par les \u00e9vider, avec prudence pour ne pas les d\u00e9chirer. Puis je les p\u00e8le tout en leur laissant la queue&#8230;. Je les poche dans du vin rouge avec des \u00e9pices, et le plaisir commence&#8230;.<\/p>\n<p>Si toutefois vous n&#8217;appr\u00e9ciez pas le vin rouge, vous pouvez pocher les poires au vin blanc&#8230;<br \/>\nUn vin blanc (sec ou p\u00e9tillant), \u00a01 zeste de citron, 2 C \u00e0 soupe de citron, 100 g de sucre, 1 b\u00e2ton de cannelle, 1\/2 gousse de vanille. Pratiquer de la m\u00eame mani\u00e8re&#8230;. Vos tartes ne seront pas de la m\u00eame couleur mais seront tout aussi d\u00e9licieuses&#8230;.<\/p>\n<h2>Du vin vegan<\/h2>\n<p>J&#8217;utilise un bon vin rouge, que je choisis <strong>vegan<\/strong>. Pourquoi vegan ?<\/p>\n<p>Un vin est produit \u00e0 base de raisin, produit de la vigne, donc&#8230;. sa composition ne devrait \u00eatre que v\u00e9g\u00e9tale&#8230;<\/p>\n<p>Eh bien, d\u00e9trompez-vous ! Car il n\u2019est pas rare que les viticulteurs doivent \u00e9liminer les particules et les r\u00e9sidus de levure rest\u00e9s en suspension dans le vin. Ce processus s&#8217;appelle la \u00ab\u00a0<strong>clarification<\/strong>\u00a0\u00bb. Pour ce faire, ils\u00a0recourent \u00e0 certains produits pour fabriquer une \u00ab\u00a0colle\u00a0\u00bb comme on dit dans le jargon&#8230;<\/p>\n<p>Les produits utilis\u00e9s pour r\u00e9aliser la colle sont nombreux : blanc d\u2019oeuf, colle de poisson, ou encore cas\u00e9ine, une particule que l\u2019on retrouve dans le lait. Le plus important sera de <strong>prendre le temps de lire les \u00e9tiquettes<\/strong> afin de <strong>rep\u00e9rer un vin non coll\u00e9 et sans intrants<\/strong>. Ainsi que d\u2019interroger le\/la responsable de vente&#8230; Et puis, il y a Internet qui renseigne si un vin est vegan sans pour autant \u00eatre estampill\u00e9 vegan.
