Apparus au pays de Galles aux alentours du X<abbr class=\"abbr\" title=\"11\u1d49 si\u00e8cle\"><span class=\"romain\">I<\/span><sup>e<\/sup><\/abbr>\u00a0si\u00e8cle, ils sont tr\u00e8s r\u00e9pandus dans les pays anglo-saxons, principalement aux \u00c9tats-Unis.<\/p>\n<p>Le principe caract\u00e9ristique de fabrication des muffins consiste \u00e0 pr\u00e9parer le <strong>m\u00e9lange des ingr\u00e9dients liquides<\/strong> et celui <strong>des ingr\u00e9dients secs,<\/strong> s\u00e9par\u00e9ment, puis \u00e0 <strong>m\u00e9langer rapidement et grossi\u00e8rement les deux pr\u00e9parations<\/strong>. Contrairement aux cupcakes, les muffins n\u2019ont jamais de gla\u00e7age.<\/p>\n<p>Les muffins sont traditionnellement sucr\u00e9s.\u00a0Il existe \u00e9galement des muffins sal\u00e9s&#8230;<\/p>\n<h2>3 cl\u00e9s de r\u00e9ussite&#8230;<\/h2>\n<p>Un muffin r\u00e9ussi c&#8217; est : un petit g\u00e2teau en forme de d\u00f4me bien gonfl\u00e9, craquel\u00e9 et bien dor\u00e9, une &#8220;peau&#8221; bien color\u00e9e sur le c\u00f4t\u00e9 comme sur le dessous ( sauf s&#8217;ils cuisent en cassolette de papier), une p\u00e2te l\u00e9g\u00e8re et moelleuse avec plein de fruits ou autre garniture&#8230;. En r\u00e9sum\u00e9, je vous offre 3 cl\u00e9s !<\/p>\n<ol>\n<li><strong>Etre attentif<\/strong>&#8230; Ne pas se tromper dans les ingr\u00e9dients et ne rien oublier. Une fois le m\u00e9lange accompli, c&#8217;est trop tard !<\/li>\n<li><strong>Ne pas trop m\u00e9langer<\/strong> &#8230; M\u00eame s&#8217;il reste un peu de farine s\u00e8che dans la p\u00e2te, ne pas s&#8217;inqui\u00e9ter&#8230; Trop m\u00e9lang\u00e9s, les muffins seront fermes et compacts, surtout avec de la farine contenant du gluten&#8230;. La p\u00e2te ne doit pas reposer non plus.<\/li>\n<li><strong>Surveiller la cuisson<\/strong>&#8230; Si vous voulez des muffins bien gonfl\u00e9s, moelleux \u00e0 l&#8217;int\u00e9rieur et fermes \u00e0 l&#8217;ext\u00e9rieur, le four doit \u00eatre absolument \u00e0 la bonne temp\u00e9rature avant de commencer la cuisson&#8230; ingr\u00e9dients humides<\/h2>\n<p>On pr\u00e9pare ses <strong>ingr\u00e9dients secs<\/strong> d&#8217;un c\u00f4t\u00e9, puis les <strong>ingr\u00e9dients humides<\/strong> de l&#8217;autre. On les m\u00e9lange tr\u00e8s rapidement, en versant les ingr\u00e9dients humides dans les ingr\u00e9dients secs. Pr\u00e9voir pour ces derniers un bol m\u00e9langeur plus grand&#8230;.<\/p>\n<p>En guise de mati\u00e8re grasse, j&#8217;utilise l<strong>&#8216;huile de tournesol<\/strong>, elle permet d&#8217;obtenir des muffins bien moelleux. Mais les moules en m\u00e9tal font tr\u00e8s bien l&#8217;affaire ! Je pr\u00e9f\u00e8re les muffins cuits dans le moule que dans les cassolettes de papier&#8230;<\/p>\n<p>Les muffins cuits dans ces cassolettes de papier ressemblent plus \u00e0 mes yeux \u00e0 de la
