Il pr\u00e9sente une  haute teneur en prot\u00e9ines, son go\u00fbt est plus ou moins prononc\u00e9 selon la fermentation et il est relativement sal\u00e9. Il peut \u00eatre de couleur beige ou jaune p\u00e2le \u00e0 brun chocolat fonc\u00e9.
