Un pur r\u00e9gal&#8230;.<\/p>\n\n\n\n<!--more-->\n\n\n\n<p class=\"wp-block-paragraph\">Le fromage v\u00e9g\u00e9tal fondu co\u00fbte plut\u00f4t cher dans le commerce,  environ 3\u20ac les 200g en grande surface et plus cher encore en maison bio&#8230;  Le faire soi-m\u00eame est hyper simple et revient bien moins cher. ?<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Une fois refroidi, le sortir de son r\u00e9cipient, le saler l\u00e9g\u00e8rement sur toutes ses faces et l\u2019envelopper dans une toile de coton. Je me sers de ma toile \u00e0 tofu ! Un grand mouchoir en tissu (propre et r\u00e9serv\u00e9 \u00e0 cet usage) peut convenir parfaitement. Remettre le fromage dans le r\u00e9cipient et le conserver au r\u00e9frig\u00e9rateur. Consommer dans les jours qui suivent&#8230;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Dans cette recette, j&#8217;utilise la <strong>Kappa Carraghenane<\/strong>. Vous pouvez utiliser l&#8217;<strong>Agar Agar<\/strong> \u00e0 la place. L&#8217;avantage avec la KC, c&#8217;est l&#8217;\u00e9lasticit\u00e9&#8230; Le fromage va se solidifier mais va redevenir coulant \u00e0 la cuisson&#8230;.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Bon \u00e0 savoir sur la Kappa Carragh\u00e9nane : <\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Ce g\u00e9lifiant est issu d&#8217;algues rouges, il s&#8217;agit donc d&#8217;un g\u00e9lifiant v\u00e9g\u00e9tal.  La kappa carragh\u00e9nane constitue une bonne alternative \u00e0 la g\u00e9latine ou \u00e0 l&#8217;oeuf puisque qu&#8217;elle permet d&#8217;obtenir une gel\u00e9e ferme, tr\u00e8s utile dans les pr\u00e9parations \u00a0\u00ab\u00a0laiti\u00e8res\u00a0\u00bb et p\u00e2tissi\u00e8res. Vous pourrez notamment r\u00e9aliser des flans sans oeuf, des nappages &#8230; Elle est utilis\u00e9e dans la cuisine mol\u00e9culaire&#8230;. Il existe plusieurs sortes de carragh\u00e9nane, en fonction leurs conditions de culture et de leur origine.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Les diff\u00e9rentes carragh\u00e9nanes  <\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Il en existe trois sortes : <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">&#8211; <strong>Kappa<\/strong> : donne un <strong>gel mieux form\u00e9 et plus dur<\/strong>. Il peut \u00eatre utilis\u00e9 pour cr\u00e9er par exemple des spaghettis. Il peut \u00eatre utilis\u00e9 dans la cr\u00e9ation de confitures ou de gel\u00e9es fines. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">&#8211; <strong>Lambda<\/strong> : cette cat\u00e9gorie de produits est diff\u00e9rente dans sa dissolution car il se m\u00e9lange plus facilement dans de l\u2019eau plus froide. Ce n\u2019est pas un bon g\u00e9lifiant, c\u2019est pour cela qu\u2019il est davantage utilis\u00e9 en \u00e9paississement.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">On peut l&#8217; identifier sous le code <strong>E 407<\/strong>. Elles sont tr\u00e8s pr\u00e9sentes dans les aliments ultra-transform\u00e9s, et sont tr\u00e8s critiqu\u00e9es par le groupe d\u2019experts de l\u2019Efsa&#8230; Les <strong>carragh\u00e9nanes<\/strong> peuvent dans certaines conditions de temp\u00e9rature et d\u2019acidit\u00e9 se d\u00e9grader en compos\u00e9s de plus faible poids mol\u00e9culaire : \u00ab <strong>les carragh\u00e9nanes d\u00e9grad\u00e9s<\/strong> \u00bb. Ces derni\u00e8res sont class\u00e9es par le Centre international de recherche sur le cancer (CIRC) comme \u00ab potentiellement canc\u00e9rig\u00e8nes chez l\u2019homme \u00bb. Cependant, il est difficile de se faire une opinion quant \u00e0 l\u2019effet que peuvent avoir ces additifs sur la sant\u00e9 tant les \u00e9tudes sont contradictoires. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Chez l\u2019animal, cet additif provoquerait des ulc\u00e9rations au niveau du c\u00f4lon ainsi que des <em>ph\u00e9nom\u00e8nes inflammatoires<\/em> dans diff\u00e9rents tissus. Il pourrait aussi favoriser la <em>r\u00e9sistance \u00e0 l\u2019insuline.<\/em><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Les pistes sont brouill\u00e9es car dans la plupart des \u00e9tudes toxicologiques, la teneur en <strong>carragh\u00e9nanes d\u00e9grad\u00e9es<\/strong> des \u00e9chantillons test\u00e9s n\u2019est pas sp\u00e9cifi\u00e9e. Comme je ne consomme pas de <strong>nourriture ultra-transform\u00e9e<\/strong> et que j\u2019utilise cet additif dans ma cuisine, \u00e0 petite dose, 10g pour 550g de produit fini, je ne me sens pas particuli\u00e8rement inqui\u00e8te. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Cependant, une personne souffrant de lourdes pathologies intestinales, ou d\u2019intol\u00e9rance au glucose fera s\u00fbrement le choix de s\u2019en abstenir&#8230;.<\/strong><\/p>\n\n\n\n<figure class=\"wp-block-gallery columns-0 is-cropped wp-block-gallery-4 is-layout-flex
