A S\u00e9oul, en Cor\u00e9e du Sud, il existe un <strong>mus\u00e9e du Kimchi<\/strong> !<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Il existe <strong>des centaines de vari\u00e9t\u00e9s de kimchi<\/strong> faits \u00e0 partir de diff\u00e9rents l\u00e9gumes en tant que principaux ingr\u00e9dients. Comme pour le couscous, chaque famille a SA recette ! <\/p>\n\n\n\n<!--more-->\n\n\n\n<p class=\"wp-block-paragraph\">Autrefois, (et encore aujourd&#8217;hui \u00e0 la campagne ), le <strong>Kimchi<\/strong> \u00e9tait stock\u00e9 dans de grandes jarres en fa\u00efence, enterr\u00e9es dans le sol pour qu&#8217;il ne g\u00e8le pas pendant l&#8217;hiver  rester au frais pendant l&#8217;\u00e9t\u00e9. Aujourd&#8217;hui, c&#8217;est le r\u00e9frig\u00e9rateur qui est utilis\u00e9 pour stocker le Kimchi.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">La <strong>lacto-fermentation<\/strong> est un moyen id\u00e9al de conserver les l\u00e9gumes au fil des saisons. C&#8217;est le proc\u00e9d\u00e9 utilis\u00e9 pour la <strong>choucroute<\/strong>, mieux connue des Fran\u00e7ais ou les <strong>pickles<\/strong> Britanniques. Ce  sont des aliments vivants excellents pour notre sant\u00e9. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">La version la plus connue du kimchi est celle \u00e0 base de chou chinois mais il existe bon nombre d\u2019autres versions pr\u00e9par\u00e9es avec du concombre, du radis ou des ciboules&#8230;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Il fait partie des accompagnements du repas \u00e0 la cor\u00e9enne d\u00e8s le petit-d\u00e9jeuner. Le tron\u00e7on de chou est coup\u00e9 en carr\u00e9 comme je le montre dans ma vid\u00e9o et il est pr\u00e9sent\u00e9 dans des petits bols dans lesquels on le pioche avec ses baguettes. Le Kimchi est croquant et \u00e9pic\u00e9. Il faut juste du temps ! Mais vous aurez du Kimchi pour un bon moment ! Je pr\u00e9f\u00e8re garder les feuilles de chou enti\u00e8res. on peut les couper en menus morceaux et \u00e9viter l&#8217;\u00e9tape de la garniture entre les feuilles. Je trouve cette pr\u00e9sentation moins \u00e9l\u00e9gante, et le plaisir gustatif est plus uniforme. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ma recette est 100% v\u00e9g\u00e9tale, je n&#8217;ajoute ni crevette ni sauce de poisson.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Pour se servir<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Toujours utiliser un objet propre! Ne pas d\u00e9ranger le reste de la pr\u00e9paration. Et surtout, retasser le chou restant.
