Il ne faut pas \u00eatre press\u00e9.e car apr\u00e8s l&#8217;avoir cuit, il faut \u00eatre capable d&#8217;attendre plusieurs jours avant de le d\u00e9guster ! C&#8217;est au bout de 3\/4 jours que vous aurez le meilleur go\u00fbt, et les plus belles tranches !<\/p>\n\n\n\n<!--more-->\n\n\n\n<h2 class=\"wp-block-heading\">Un peu d&#8217;histoire<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">&nbsp;La premi\u00e8re trace du g\u00e2teau aux fruits remonte \u00e0 l\u2019\u00c9gypte. Il s&#8217;agit de pain dans lequel \u00e9taient int\u00e9gr\u00e9s des fruits pour le sucrer.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Au fil des si\u00e8cles, on ajoute d&#8217;autres fruits, des noix&#8230; En Espagne, en Allemagne et en Italie, on retrouve une version diff\u00e9rente du g\u00e2teau aux fruits. \u00c0 la suite de l\u2019expansion de l\u2019empire romain, le g\u00e2teau aux fruits s\u2019est implant\u00e9 un peu partout.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Au Moyen-\u00c2ge, les explorateurs nous apportent les \u00e9pices et les agrumes qui sont ajout\u00e9s dans les g\u00e2teaux. Puis la p\u00e9riode coloniale apporte tout ce qui venait d&#8217;Am\u00e9rique : noix de p\u00e9can, sucre de canne. Le tafia, qui est l\u2019anc\u00eatre du rhum, est aussi ajout\u00e9 pour la conservation et le go\u00fbt.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Le g\u00e2teau aux fruits du Qu\u00e9bec nous vient plus directement des Anglais, le&nbsp;<em>plum pudding<\/em>, il est lourd et dense. Les tout premiers <em>plum puddings<\/em> anglais contiennent de la viande ! Il est devenu &#8216;g\u00e2teau&#8217; un peu avant le 18e si\u00e8cle quand on en a retir\u00e9 la viande !<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Un g\u00e2teau de f\u00eate ?<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Le g\u00e2teau aux fruits \u00e9tait toujours consomm\u00e9 \u00e0 des moments sp\u00e9ciaux ! \u00c0 l\u2019\u00c9piphanie, lors des noces&#8230; C\u2019est un g\u00e2teau co\u00fbteux qui contient des \u00e9l\u00e9ments chers : les fruits qu\u2019il faut faire venir de l\u2019ext\u00e9rieur, les noix et les \u00e9pices. Chez les Fran\u00e7ais, l\u2019apparition du <strong>g\u00e2teau aux fruits<\/strong> est r\u00e9cente, vers  1950.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">La <strong>version sal\u00e9e du cake<\/strong> s&#8217;est d\u00e9mocratis\u00e9e ces derni\u00e8res d\u00e9cennies gr\u00e2ce aux ap\u00e9ro-dinatoires.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Un g\u00e2teau boud\u00e9, pourquoi ?<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Peut-\u00eatre \u00e0 cause de sa lourdeur. Puis les versions industrielles des <strong>g\u00e2teaux aux fruits<\/strong> sont mauvaises : trop de p\u00e2te, fruits choisis de mauvaise qualit\u00e9. Il y a 15 ou 20 ans, \u00e0 la place des fruits confits, on utilise des d\u00e9s de past\u00e8que (dans le meilleur des cas) ou de navets (dans le pire) qui sont neutralis\u00e9s en go\u00fbt chimiquement, puis color\u00e9s et sucr\u00e9s. Le vrai scandale c&#8217;est bien s\u00fbr qu&#8217;on puisse les vendre sous le nom de &#8220;<strong>Fruits confits<\/strong>&#8220;. D&#8217;ailleurs, sur l&#8217;\u00e9tiquette, \u00e9crit en tout petits caract\u00e8res bien sur, le premier ingr\u00e9dient est : &#8220;<strong>Rave<\/strong>&#8220;&#8230;. Il est pratique \u00e0 transporter et se conserve tr\u00e8s bien !<\/strong><\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Une version vegan ?<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">J&#8217;aime beaucoup le <strong>cake aux fruits<\/strong>, accompagn\u00e9 d&#8217;un bon caf\u00e9 ou th\u00e9 ! <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">\u00c0 l&#8217;\u00e9poque o\u00f9 je consommais encore des oeufs et du beurre, mon cake sans gluten \u00e9tait sans conteste un succ\u00e8s. Puis j&#8217;ai totalement arr\u00eat\u00e9 de consommer ces produits par \u00e9thique personnelle. Comment le faire sans oeufs ni beurre, sans pour autant le rendre d\u00e9testable ? L&#8217;id\u00e9al est le moule en fer blanc, un mat\u00e9riau \u00e9cologique offrant une conductivit\u00e9 thermique exceptionnelle, recouvert d&#8217;une feuille de papier cuisson. Le moule en m\u00e9tal r\u00e9partira harmonieusement la chaleur et votre cake sera parfaitement cuit. Le cake cuit longtemps, 1 heure au moins. Si vous utilisez un moule en silicone par exemple, le cake ne sera pas cuit \u00e0 coeur. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">J&#8217;ai choisi un moule bien large, 12 cm, \u00e0 la place du moule traditionnel de 8 cm. Il suffit de le couper en tranches, de les d\u00e9poser sur un plateau et les congeler. Les empiler ensuite avec un carr\u00e9 de papier cuisson entre chaque tranche, les mettre dans un sac de cong\u00e9lation de taille adapt\u00e9e. Je les mets par 3 ou 4 tranches. Fermer le sachet, puis, \u00e0 l&#8217;aide d&#8217;une paille enfonc\u00e9e dans le coin du sachet, aspirer pour faire le vide d&#8217;air. Refermer soigneusement le sachet et remettre au cong\u00e9lateur.
