L&#8217;ail en est certainement le num\u00e9ro 1 !<\/p>\n\n\n\n<!--more-->\n\n\n\n<h2 class=\"wp-block-heading\">L&#8217;ail noir, c&#8217;est quoi ?<\/h2>\n\n\n\n<p>C&#8217;est de l&#8217;ail blanc, tout simplement ! Mais&#8230;<\/p>\n\n\n\n<p><strong>Sa &#8220;fermentation&#8221; va lui donner cette couleur noire, cette saveur sp\u00e9ciale et ses vertus d\u00e9cupl\u00e9es par rapport \u00e0 l&#8217;ail traditionnel<\/strong>. Sa pelure reste blanche. Les gousses deviennent moelleuses, d&#8217;une texture fondante. Pour information, il est tout \u00e0 fait possible de faire de l&#8217;ail noir maison avec un cuiseur \u00e0 riz, il faut juste <strong>beaucoup<\/strong> de patience ! Cette tr\u00e8s basse temp\u00e9rature de cuisson permet d\u2019\u00e9viter la formation d\u2019<strong>alcrylamide<\/strong>, une substance toxique qui se d\u00e9veloppe \u00e0 partir de 120\u00b0C. Selon les m\u00e9thodes, l&#8217;ail peut \u00eatre laiss\u00e9 dans les cuves <strong>de 2 semaines, jusqu&#8217;\u00e0 2 mois<\/strong>, afin d&#8217;obtenir cet&nbsp;<strong>ail confit \u00e0 la couleur \u00e9b\u00e8ne<\/strong>. <\/li><li>L&#8217;ail noir est plac\u00e9 sur des paniers sp\u00e9ciaux pour refroidir et s\u00e9cher pendant une semaine.
