Je les achetais \u00e0 mes enfants et ils en sont toujours aussi friands ! Alors quand j&#8217;ai vu Pierre Herm\u00e9 les faire sous mes yeux, je me suis promis de relever le challenge de les v\u00e9g\u00e9taliser et si possible les r\u00e9ussir sans gluten !<\/p>\n\n\n\n<!--more-->\n\n\n\n<p class=\"wp-block-paragraph\">Fait ! Le beurre animal est essentiellement gras. C&#8217;est une difficult\u00e9 certaine de le remplacer. Il faut oublier les barquettes dont le produit est mou et compos\u00e9 \u00e0 55% de mati\u00e8res grasses&#8230;.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">J&#8217;ai choisi le <strong>planta fin 100% v\u00e9g\u00e9tal<\/strong>. L&#8217;huile de palme est garantie d&#8217;origine durable. Mais&#8230; il y a de l&#8217;huile de palme&#8230;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Sa couleur n&#8217;est pas stable. Il est jaune fonc\u00e9 en ext\u00e9rieur et plus p\u00e2le \u00e0 l&#8217;int\u00e9rieur. Pour la p\u00e2tisserie, aucun souci ! Apr\u00e8s avoir test\u00e9 ces produits, je les pense adapt\u00e9s aux professionnels. Ils \u00e9vitent aussi la consommation forc\u00e9e de pois chiches lorsqu&#8217;on veut r\u00e9cup\u00e9rer le jus.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">La farine pour la version sans gluten <\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">J&#8217;utilise mon mix habituel : 3\/4 de farine de riz et 1\/4 de farine de pois chiche plus 1 cuiller \u00e0 soupe rase de Ma\u00efzena pour 200 \u00e0 250g de ce m\u00e9lange. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Si vous n&#8217;avez pas de probl\u00e8me avec le gluten, utilisez votre farine \u00e0 p\u00e2tisserie habituelle
