Il te faut simplement du tofu ferme, et des champignons pleurotes. <\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"le-tofu\">Le tofu : <\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Je te renvoie \u00e0 ma vid\u00e9o sur le pressage du tofu. En le pressant, tu fais sortir de l&#8217;eau, cela change sa consistance, et quand il cuit dans un liquide, il s&#8217;impr\u00e8gne davantage de ses saveurs. Il est reconnaissable \u00e0 son grand chapeau qui ressemble \u00e0 une oreille. Il pousse dans le Sud de la France. On utilise le pied de ce dernier en alimentation vegan pour remplacer des effiloch\u00e9s de poulet.<\/li><\/ul>\n<\/div><\/div>\n\n\n\n<p class=\"wp-block-paragraph\">Attention, le pleurote de l&#8217;olivier est tr\u00e8s toxique. Source : <em>L&#8217;Atelier des chefs<\/em> <\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"choisir-consommer-et-conserver-le-pleurote\">Choisir, consommer et conserver le pleurote : <\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Choisis-le bien frais, charnu, sans taches et sans filaments blancs. Privil\u00e9gie l&#8217;achat de champignons avec un chapeau de couleur claire et \u00e0 la bonne odeur d&#8217;anis. Il est savoureux po\u00eal\u00e9, brais\u00e9 ou saut\u00e9, seul ou m\u00e9lang\u00e9 \u00e0 d&#8217;autres champignons. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ne masque pas sa saveur en l&#8217;associant \u00e0 des aliments au go\u00fbt prononc\u00e9. Tu peux le garder une semaine au r\u00e9frigerateur dans un recipient ni trop ouvert, ni trop herm\u00e9tique. <\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"preparer-cuire-et-presenter-le-pleurote\">Pr\u00e9parer, cuire et pr\u00e9senter le pleurote : <\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Ne le lave surtout pas dans l&#8217;eau ! Il suffit de le gratter \u00e0 la pointe du couteau, de les essuyer \u00e0 l&#8217;aide d&#8217;un linge humide. Il faut retirer avant tout les parties ab\u00eem\u00e9es et la base terreuse. Commence par une cuisson \u00e0 feu vif puis continue assez longuement \u00e0 feu doux car leur chair est ferme. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Le pied est plus ferme que le reste : pour une cuisson parfaite, fais d&#8217;abord cuire les pieds puis ajoute les chapeaux. Personnellement, je garde les pieds pour les potages mix\u00e9s. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pas besoin de couper tes pleurotes. Il suffit de les effeuiller pour une pr\u00e9paration simple et un r\u00e9sultat esth\u00e9tique et savoureux&#8230;<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"la-recette\">La recette
