Mais ils n&#8217;avaient pas la m\u00eame t\u00eate que sur la photo &#8230; Le beau macaron, lisse et brillant, avec une jolie collerette &#8230; Je n&#8217;allais pas laisser \u00e7a l\u00e0, je voulais comprendre, je voulais r\u00e9ussir &#8230;<\/p>\n<p>J&#8217;ai alors lu des centaines d&#8217;articles consacr\u00e9s aux macarons, mais aucun ne me permettait de d\u00e9couvrir ce myst\u00e8re. Puis le miracle est arriv\u00e9 ! Un seul article parlait du secret du macaron : le macaronnage ! Je n&#8217;utilise pas les tapis avec des formes&#8230;<\/p>\n<h2>On commence, la meringue !<\/h2>\n<p>Mettez dans la cuve de votre robot les 120g de blanc d\u2019\u0153uf et commencez \u00e0 battre. N&#8217;utilisez pas la vitesse maxi si vous poss\u00e9dez un Kitchen Aid. Battre trop vite fait de trop grosses bulles qui nuisent par la suite.<\/p>\n<p>D\u00e8s que le m\u00e9lange mousse, ajoutez votre premi\u00e8re ration de 84g de sucre. Laissez monter en meringue et versez doucement la deuxi\u00e8me portion de 84g de sucre. On serre la meringue. Tout est bien m\u00e9lang\u00e9 ?<\/p>\n<h2>Le secret : Le macaronnage !<\/h2>\n<p>Dans une recette de g\u00e2teau, d\u00e8s qu&#8217;il est question d&#8217;incorporer des blancs mont\u00e9s en neige, on nous dit de prendre beaucoup de pr\u00e9cautions. Dans le cas des macarons, c&#8217;est faux ! On oublie \u00e7a !<\/p>\n<p>Le macaronnage consiste \u00e0 battre la p\u00e2te jusqu&#8217;\u00e0 ce qu&#8217;elle devienne fluide et brillante. On travaille la p\u00e2te en la soulevant de bas en haut, \u00e9nergiquement, avec une corne \u00e0 macaronner. Il faut mettre notre belle pr\u00e9paration dans une poche \u00e0 douille. Elle doit \u00eatre \u00e9quip\u00e9e d&#8217;une douille n\u00b08. J&#8217;utilise des poches jetables, faisant ainsi une infraction \u00e0 mes id\u00e9ologies \u00e9colo&#8230; Vos plaques \u00e0 p\u00e2tisserie sont recouvertes de papier cuisson ? On y va. Tenez la poche bien \u00e0 la verticale et appuyez pour faire sortir la p\u00e2te. Les macarons doivent faire 3cm de diam\u00e8tre environ. On trace la premi\u00e8re ligne puis on aligne les macarons suivants. Je ne conseille pas les plaques silicone avec des marques, \u00e7a co\u00fbte cher et on prend vite le coup d&#8217;optimiser la place sur la plaque sans coller les coques entre elles.<\/p>\n<p>Quand vos macarons sont dress\u00e9s, il reste encore un geste \u00e0 faire pour les parfaire. Il faut taper la plaque\u00a0 fortement sur la plan de travail. Le pr\u00e9chauffer \u00e0 160\u00b0C.<\/p>\n<p>Au terme du croutage, mettre les macarons au four pour 10 minutes. Dans mon cas, ils sont parfaits au bout de 13 minutes. Les macarons ne doivent jamais prendre une coloration brun\u00e2tre.<\/p>\n<p>Au cours de la cuisson, on voit le pied se former.
