Voil\u00e0 un sujet passionnant ! Il est beaucoup utilis\u00e9 pour remplacer les oeufs dans les recettes v\u00e9g\u00e9tales. Le plus utilis\u00e9 est le <strong>chlorure de magn\u00e9sium<\/strong> ou le <strong>Nigari<\/strong>. Le citron et le vinaigre fonctionnent assez bien aussi <strong>pour le tofu ferme<\/strong>. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pour faire un tofu de qualit\u00e9, une des choses les plus difficiles \u00e0 faire est d&#8217;<strong>\u00e9valuer exactement la quantit\u00e9 de coagulant <\/strong>\u00e0 ajouter au lait de soja. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">&#8211; La quantit\u00e9 est appropri\u00e9e si le petit lait est transparent, d&#8217;une couleur jaune p\u00e2le et de saveur douce. S&#8217;il est un peu amer, il y a trop de coagulant. Si le petit lait est l\u00e9g\u00e8rement opaque, il n\u2019y a pas assez de coagulant. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">&#8211; La temp\u00e9rature du lait, lorsqu&#8217;on lui ajoute le coagulant, influe aussi sur la qualit\u00e9 du tofu : \u00c0 haute temp\u00e9rature, la coagulation est rapide et la texture est dure. \u00c0 basse temp\u00e9rature, le gel est plus mou mais si la temp\u00e9rature est trop basse, la coagulation est incompl\u00e8te, le tofu contient trop d&#8217;eau et ne garde pas sa forme. <\/p>\n\n\n\n<h2 class=\"wp-block-heading\">L\u2019origine du tofu soyeux est m\u00e9connue<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Le premier <strong>tofu soyeux<\/strong> document\u00e9 \u00e9tait produit au Japon en versant du lait de soja dans de petits moules en bois laqu\u00e9. Le coagulant, du nigari, \u00e9tait ensuite vers\u00e9 directement dans les moules avec le lait qu\u2019on laissait se figer SANS LE PRESSER. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ce tofu, tr\u00e8s fragile \u00e9tait difficilement transportable et \u00e9tait r\u00e9serv\u00e9 \u00e0 l\u2019aristocratie. Sa texture fine et glissante lui a valu l\u2019appellation \u00ab&nbsp;soyeux&nbsp;\u00bb. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Plus tard, l\u2019utilisation du <strong>sulfate de calcium<\/strong> a permis de faire un tofu soyeux relativement solide. Dans les ann\u00e9es 60, l\u2019utilisation de la <strong>glucono-delta-lactose<\/strong> a permis la fabrication d\u2019un tofu soyeux super fin, super glissant, ferme et \u00e9lastique et comme g\u00e9lifi\u00e9, peu fragile et transportable. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Donc, ce qui diff\u00e9rencie le tofu ferme du tofu soyeux c\u2019est la temp\u00e9rature du jus de soja et la qualit\u00e9 de son coagulant, tr\u00e8s scientifiquement choisi ! <strong><em>Et surtout &#8230; il n\u2019est pas press\u00e9<\/em><\/strong> ! <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Tu liras sans doute quelque part que le tofu soyeux est simplement moins \u00e9goutt\u00e9 ou moins press\u00e9 que le tofu ferme, qu&#8217;il faut le mixer ensuite&#8230; C\u2019est du bricolage maison ! Ni plus ni moins\u2026 et c\u2019est \u00ab&nbsp;Beurk!&nbsp;\u00bb <\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Il est tr\u00e8s difficile pour un particulier de r\u00e9ussir le tofu soyeux.<\/strong> Il faut mettre le coagulant dans le lait ti\u00e8de, pour ne pas le faire cailler imm\u00e9diatement comme pour le tofu ferme, et le garder en \u00e9tuve jusqu\u2019\u00e0 compl\u00e8te transformation, un peu comme un yaourt en fait. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Les diff\u00e9rentes qualit\u00e9s de tofu soyeux : <\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Comme je te le montre dans ma vid\u00e9o, il y a de grandes diff\u00e9rences de qualit\u00e9 entre le tofu en barquette plastique et le tofu en emballage carton de tradition japonaise ou chinoise. La pr\u00e9sence de bulles sur le dessus, quelquefois m\u00eame une l\u00e9g\u00e8re peau le rend impropre \u00e0 la recette raffin\u00e9e japonaise du tofu soyeux Hiyayakko, ou m\u00eame en petits cubes dans la soupe Miso. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Le <strong>tofu soyeux<\/strong> se coupe dans la main. Il doit avoir une belle tenue pour cette op\u00e9ration.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">As-tu d\u00e9j\u00e0 vu des chrysanth\u00e8mes de tofu soyeux ? <\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">C\u2019est extr\u00eamement beau \u00e0 voir ! On taille un petit bloc de tofu de telle mani\u00e8re qu\u2019il va former une fleur dont les fins p\u00e9tales ressemblant au chrysanth\u00e8me vont se d\u00e9ployer dans le bol quand on verse la soupe !
