On commence avec<strong> le pain de sarrasin<\/strong>. Puis tu pourras de la m\u00eame mani\u00e8re confectionner celui aux <strong>pois chiches<\/strong>, aux<strong> lentilles corail<\/strong> ou encore aux <strong>lentilles B\u00e9luga<\/strong> !<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Il n\u2019y a que la quantit\u00e9 d\u2019eau qui change selon la graine utilis\u00e9e. J&#8217;ai travaill\u00e9 ces recettes encore et encore pour t&#8217;offrir la certitude de les r\u00e9ussir \u00e0 chaque fois.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">C\u2019est indispensable d\u2019avoir un robot culinaire avec la lame horizontale en S pour plus de facilit\u00e9. Ce n\u2019est pas une c\u00e9r\u00e9ale<\/strong>. Il appartient \u00e0 la famille des Polygonac\u00e9es (comme l\u2019oseille ou la rhubarbe). Ses graines sont utilis\u00e9es et consomm\u00e9es telle une c\u00e9r\u00e9ale.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Le&nbsp;<strong>bl\u00e9 noir&nbsp;<\/strong>est une source de&nbsp;&nbsp;prot\u00e9ines v\u00e9g\u00e9tales, il apporte \u00e9galement des min\u00e9raux : phosphore, potassium, calcium et magn\u00e9sium. Ses teneurs en mati\u00e8res grasses et en sucres sont faibles. Les&nbsp;<strong>graines de sarrasin<\/strong>&nbsp;sont riches en fibres solubles, r\u00e9gulant le transit intestinal.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Comme le&nbsp;<strong>sarrasin ne contient pas de&nbsp;<\/strong>gluten, il est donc impossible de r\u00e9aliser du <strong>pain \u00ab lev<\/strong>\u00e9 \u00bb avec uniquement de la&nbsp;<strong>farine de bl\u00e9 noir<\/strong>. Dans mes recettes, le psyllium va permettre au pain de gonfler \u00e0 la cuisson gr\u00e2ce \u00e0 la levure chimique. Il en va de m\u00eame avec les autres graines utilis\u00e9es.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Les lentilles corail, leur int\u00e9r\u00eat<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">La <strong>lentille corail <\/strong>est un ingr\u00e9dient id\u00e9al pour se sentir rassasi\u00e9. On l\u2019utilise r\u00e9guli\u00e8rement dans les cuisines indienne, asiatique ou africaine. La <strong>lentille corail <\/strong>est une mine d\u2019or pour la sant\u00e9 car c\u2019est une<strong>&nbsp;tr\u00e8s bonne source de prot\u00e9ines v\u00e9g\u00e9tales<\/strong> et de fer sans \u00eatre riche en lipides ou en calories.&nbsp;On la trouve facilement en \u00e9picerie.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Les lentilles B\u00e9luga, leur int\u00e9r\u00eat<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">La&nbsp;<strong>lentille beluga<\/strong>, originaires de la r\u00e9gion de l\u2019Asie centrale, est surnomm\u00e9e \u00ab&nbsp;<strong>caviar v\u00e9g\u00e9tal<\/strong>&nbsp;\u00bb. C\u2019est un petite&nbsp;<strong>lentille noire<\/strong>&nbsp;\u00e0 l\u2019apparence \u00e9l\u00e9gante, brillante et \u00e0 la saveur d\u00e9licate.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Elles sont riches en fer, contiennent des antioxydants en grand nombre<strong>,<\/strong>&nbsp;du magn\u00e9sium, du s\u00e9l\u00e9nium et du potassium, et enfin des vitamines du groupe B. Elles sont riches en fibres, et ont un&nbsp;<strong>index glyc\u00e9mique bas<\/strong>. Leurs glucides sont dig\u00e9r\u00e9s lentement, ce qui \u00e9vite les pics de glyc\u00e9mie.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Les pois chiches, leur int\u00e9r\u00eat<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Comme&nbsp;les lentilles&nbsp;ou encore les haricots rouges, le pois chiche est l\u2019une des&nbsp;l\u00e9gumineuses les plus consomm\u00e9es au monde.&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Riche en&nbsp;<strong>prot\u00e9ines v\u00e9g\u00e9tales<\/strong>, il repr\u00e9sente une bonne alternative \u00e0 la viande. Il contient \u00e9galement une bonne quantit\u00e9 de&nbsp;<strong>fibres<\/strong>, facilitant ainsi le transit intestinal. Le pois chiche aide \u00e0 lutter contre le mauvais cholest\u00e9rol et pr\u00e9serve donc votre&nbsp;<strong>sant\u00e9 cardiovasculaire<\/strong>. Il est une source importante de&nbsp;<strong>vitamine&nbsp;B9<\/strong>, excellent pour le renouvellement de nos cellules et pour les enfants en pleine croissance.&nbsp;<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Le psyllium blond, son int\u00e9r\u00eat<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">L\u2019utilisation num\u00e9ro un du <strong>psyllium<\/strong> <strong>blond<\/strong>, c\u2019est la lutte contre les probl\u00e8mes intestinaux, qu\u2019il s\u2019agisse de constipation ou au contraire de diarrh\u00e9e.&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Le mucilage que contiennent les t\u00e9guments de psyllium, (les enveloppes qui entourent les graines), est une&nbsp;<strong>substance qui gonfle au contact de l\u2019eau<\/strong>, lui donnant une texture visqueuse de gel. C\u2019est pourquoi on peut l\u2019utiliser comme g\u00e9latine v\u00e9g\u00e9tale par exemple. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Dans les recettes de ces petits pains, <strong>le psyllium<\/strong> va permettre la coh\u00e9sion de la p\u00e2te et lui donner son gonflant \u00e0 la cuisson.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ces petites graines ont la capacit\u00e9 d\u2019absorber une partie du \u201cmauvais gras\u201d (cholest\u00e9rol LDL), l\u2019emp\u00eachant de faire son chemin jusque dans le sang.&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pour toutes ces bonnes raisons, consommer quotidiennement ces pains sera b\u00e9n\u00e9fique pour ta sant\u00e9. De plus, tu pourras varier autant que tu le d\u00e9sires le go\u00fbt de ton pain !<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Tu peux aussi t&#8217;amuser avec les graines pour l&#8217;enrober ! J&#8217;aime beaucoup le <strong>s\u00e9same<\/strong> avec le pain de pois chiches, et les <strong>graines de pavot <\/strong>pour les autres. \u00c0 toi de choisir ! Il se toaste aussi tr\u00e8s bien, et tu peux composer de super Croque Monsieur !<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">La recette<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Tu pars toujours de 200 g de graines<\/strong>, \u00e0 faire tremper la veille. Elles vont gonfler, entamer leur processus de germination et se d\u00e9lester le leurs inhibiteurs de croissance. Cette op\u00e9ration rend les graines plus digestes.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Comme elles n&#8217;absorbent pas l&#8217;eau de la m\u00eame mani\u00e8re, et que l&#8217;\u00e9gouttage peut varier d&#8217;une pr\u00e9paration \u00e0 l&#8217;autre, je ne te mets pas une quantit\u00e9 d&#8217;eau fixe \u00e0 ajouter. C&#8217;est toi qui doit ajuster la quantit\u00e9 d&#8217;eau vers un poids d\u00e9fini en fonction de mes indications. De cette fa\u00e7on, ta p\u00e2te sera toujours identique, pas une fois trop molle, ou une fois trop dure.<\/p>\n\n\n<div id=\"recipe\"><\/div><div id=\"wprm-recipe-container-4802\"
